Special Lamb Shanks - cooking recipe

Ingredients
    3 lamb shanks
    1/3 c. oil
    3 cloves garlic, finely chopped
    1 large onion, sliced
    2 or more carrots, cut into 2 x 1/2-inch strips
    2 bay leaves
    1/2 tsp. crumbled oregano
    1/2 tsp. thyme, crumbled
    1 can (16 oz.) stewed tomatoes
Preparation
    Brown lamb shanks in oil in heavy skillet.
    While shanks are browning, lightly oil large casserole.
    Place garlic, onions and carrots in bottom of casserole.
    Transfer browned shanks to casserole in single layer.
    Add bay leaves, oregano and thyme. Pour stewed tomatoes over shanks.
    Cover.
    Place in 350\u00b0 oven for 2 1/2 to 3 hours.
    Add water if necessary during cooking.
    Serves 3 to 6.
