French Green Lentil Salad - cooking recipe

Ingredients
    1 c. green lentils, washed
    1 onion, finely chopped
    1 bay leaf
    2 sprigs fresh thyme
    1 clove garlic
    2 tsp. salt
    6 Tbsp. olive oil
    2 Tbsp. fresh lemon juice
    2 Tbsp. fresh chopped parsley
    pepper to taste
Preparation
    Cook lentils and add all but last 4 ingredients in 4 cups of water for 30 minutes.
    Drain lentils well.
    Remove bay leaf, garlic and thyme.
    Keep lentils warm and whisk together last 4 ingredients.
    Add lentils to dressing and serve warm.
    Serves 4 to 6.
