Rice And Tofu Casserole - cooking recipe

Ingredients
    1 c. long grain rice
    3 c. boiling water
    1/2 c. bulgur wheat
    2 Tbsp. olive or canola oil
    1 Tbsp. grated fresh ginger
    3/4 lb. firm tofu
    2 Tbsp. soy sauce
    4 oz. chopped onion
    4 oz. green pepper
    4 oz. grated carrot
Preparation
    Combine rice and boiling water in covered pan.
    Add bulgur. Add 1 tablespoon oil.
    Saute ginger and onion.
    Add crumbled tofu. Cook several minutes.
    Add green peppers, carrots and soy sauce. Cook until pepper and carrots are heated.
    Check bulgur and rice. When tender, stir in vegetables.
    Microwave, covered, several minutes, then serve.
