Fiesta Omelet(Makes 2 Servings) - cooking recipe
Ingredients

1/4 c. red or green pepper strips
1/4 c. sliced mushrooms
1/4 c. sliced onion
2 Tbsp. Blue Bonnet margarine
4 eggs, slightly beaten
2 Tbsp. water
4 thin slices avocado
1/4 c. shredded Cheddar or Monterey Jack cheese (1 oz.)
1/4 c. Ortega mild, medium or hot picante sauce
Preparation

In 8-inch nonstick skillet, over medium-high heat, cook pepper, mushrooms and onion in 2 teaspoons margarine until tender. Remove from skillet; set aside.
