Skillet Festive Chicken - cooking recipe
Ingredients

2 1/2 to 3 lb. frying chicken pieces
1 c. all-purpose flour
1 1/2 tsp. garlic salt
1/4 tsp. chili powder
2 Tbsp. oil (vegetable)
1 (15 oz.) can cut tomatoes
1 (4 oz.) diced green chilies
1 (4 1/2 oz.) can sliced black olives
1/2 c. diced green bell pepper
1/2 c. onion
1/8 c. chopped fresh cilantro
1/8 tsp. garlic powder
Preparation

Rinse chicken well.
In bag, combine flour, salt and chili powder.
Shake chicken, a few pieces at a time, in flour mixture to coat.
In large skillet, brown chicken in oil.
Meanwhile, in small bowl, combine remaining ingredients except hot cooked rice. Mix well.
Pour tomato mixture over chicken.
Simmer covered 40 minutes or until chicken is no longer pink in center.
Serve over hot cooked rice.
Makes 4 to 6 servings.
