Smoked Trout, Green Bean And New Potato Salad - cooking recipe
Ingredients

1 whole boneless smoked trout
6 new red potatoes
1/2 lb. green beans
1/2 red onion, sliced
3 Tbsp. lemon juice
2 Tbsp. balsamic vinegar
1 1/2 tsp. Dijon mustard
1/4 c. olive oil
1 large clove garlic, minced
2 Tbsp. chopped parsley
salt and pepper
Preparation

Toss the potatoes in a little olive oil and roast at 350\u00b0 for 30 to 45 minutes until just done, then cool.
Steam green beans, then cool.
Mix lemon juice, vinegar, mustard, garlic, olive oil, salt and pepper to taste.
Slice potatoes thinly and toss with green beans, onion and dressing.
Flake the trout and toss into the salad.
Garnish with chopped parsley.
Serves 4.
