Spanish Eggplant - cooking recipe
Ingredients

1 medium eggplant, pared and cubed
1 onion, chopped
1 beaten egg
1/2 c. catsup
1 Tbsp. Worcestershire sauce
1/2 c. shredded Cheddar cheese
1 c. cracker crumbs
Preparation

Boil eggplant and onion until very tender.
Drain and mash. Place in greased baking dish.
Add remaining ingredients.
Salt and pepper to taste.
Bake at 350\u00b0 for 30 minutes.
