Ingredients

1 box pearl tapioca
1 c. brown sugar
1 c. chopped dates
1/2 tsp. vanilla
Preparation

Soak tapioca overnight in enough water to cover well. Put in large baking dish, then add brown sugar, dates and enough water to keep moist. Put in oven and bake, adding more water as needed to keep from being dry. Stir occasionally. When tapioca is clear and pudding is thick, remove. Add vanilla and nuts; cool. Serve with whipped cream or Cool Whip.
