Tomato Crouton Salad - cooking recipe

Ingredients
    4 c. cubed French or Italian bread
    1 Tbsp. olive oil
    1 tsp. dried oregano
    salt and pepper to taste
    2 cucumbers, peeled and seeded
    6 ripe tomatoes, cut into 6ths
    1/4 c. chopped shallots
    1/4 c. chopped parsley or basil
    3 Tbsp. olive oil
    3 Tbsp. vinegar
    2 bunches arugula, watercress or romaine
Preparation
    Preheat
    oven
    to 350\u00b0.
    Toss bread cubes with 1 tablespoon olive
    oil,
    oregano,
    salt and pepper.
    Bake in single layer
    for 20
    minutes or until golden.
    Cut cucumbers into 1 inch cubes. Combine with all other ingredients except arugula and
    bread cubes.
    Just
    before
    serving, add bread cubes and toss.
    Divide arugula among 6 plates and top with salad.
