Friday Night Carrot Pancakes* - cooking recipe

Ingredients
    3 carrots, cooked in stock and mashed
    1/2 small onion, diced
    1 egg, beaten
    4 Tbsp. oil
    1/2 c. matzo meal
    1/2 tsp. cumin
    1/2 tsp. salt to taste
    dash of pepper
Preparation
    Brown onion in 2 tablespoons oil in medium frying pan.
    Add onion to carrots, egg, matzo meal and seasonings.
    Shape into 4 pancakes and brown on each side with remaining oil.
    Great with chicken or for Passover.
