Ingredients

3/4 c. dried apricots, cut up
1/2 c. boiling water
1 c. brown sugar
2/3 c. shortening
1 egg
2 1/4 c. flour
1/4 c. milk
3/4 tsp. baking soda
1/2 tsp. salt
chopped nuts (optional)
Preparation

Stir apricots into boiling water; let cool.
Cream the brown sugar and shortening.
Stir in egg, flour, milk, soda and salt. Add apricots with water.
Add chopped nuts, if desired.
Drop by dessert spoon onto ungreased cookie sheets.
Bake in a 375\u00b0 oven for 10 to 15 minutes.
Cookies are moist, tasty and keep well.
