Lemon Chicken(Serves 2) - cooking recipe

Ingredients
    3 whole chicken breasts, boned, skinned and defatted
    2 garlic cloves, crushed
    garlic powder
    pepper
    1/4 c. lemon juice (plus rind)
    1/2 c. water
    Progresso seasoned Italian bread crumbs
    1/4 c. chopped parsley
    1/4 c. olive oil
Preparation
    Lay breasts in Pyrex dish.
    Put crushed garlic over this, then a sprinkling of garlic powder and pepper.
    Blend lemon juice plus rind (put all or part of rind in food processor) plus water together.
    Pour over chicken.
    Cover chicken entirely with Progresso seasoned Italian bread crumbs.
    Then chopped parsley. Drizzle with olive oil over the top.
    Bake 1 hour in 350\u00b0 oven uncovered.
