Irish Stew(Celtic) - cooking recipe

Ingredients
    2 lb. cubed lamb
    1 c. carrots, cubed
    1 c. sliced celery
    1 c. turnips, cubed
    1 c. potatoes, cubed
    1 onion, sliced
    1 bay leaf
    2 tsp. rosemary
    2 tsp. parsley, chopped
    1 tsp. salt
    2 c. sliced potatoes
Preparation
    Cover lamb with boiling water and simmer for 1 hour, covered. Add carrots, celery, turnips, cubed potatoes, onion and seasonings. Cover and simmer 30 minutes.
    Add sliced potatoes, simmer another 30 minutes.
    Serve with crusty bread.
    Yields 4 servings.
