Zucchini Provencale - cooking recipe
Ingredients

1 medium onion, sliced
1 clove garlic, minced
1/4 c. salad oil
2 lb. sliced zucchini squash
4 cut up tomatoes
1 chopped green pepper
salt and pepper to taste
minced parsley
Preparation

In skillet saute, onion and garlic in oil.
Add zucchini squash, tomatoes, green pepper and salt and pepper to taste. Cook until tender.
Sprinkle with minced parsley and Parmesan cheese before serving.
Makes 8 servings.
