Tropical Stuffed Cornish Hens - cooking recipe

Ingredients
    4 Cornish hens
    1 can pineapple tidbits, packed in juice
    3/4 c. Macadamia nuts
    1.12 oz. red pepper jelly
    1 Tbsp. butter or margarine
    1 c. chopped onions
    4 c. brown rice
    3/4 c. currants
    1/2 c. chicken broth
    1 to 2 Tbsp. ginger (crystallized)
Preparation
    Saute onions, drained pineapple (heat juice with jelly), nuts, rice, ginger, currants and broth.
    Spoon 2/3 cup in each fowl. Roast one hour and ten minutes at 350\u00b0.
    Baste with jelly mixture.
