Ham Croquettes - cooking recipe

Ingredients
    1 c. cooked ham, finely chopped
    speck of cayenne
    1 large Tbsp. butter
    3 eggs
    3 c. hot mashed potatoes
    1 c. bread crumbs
Preparation
    Beat the ham, cayenne, butter and 2 of the eggs into the potatoes. Let the mixture cool slightly and shape it like croquettes. Roll in the bread crumbs. Dip in beaten egg and again in crumbs. Put in the frying basket and plunge into boiling fat. Cook 2 minutes. Drain and serve.
