Lentil Tex Mix - cooking recipe

Ingredients
    1 c. lentils
    2 c. water
    2 Tbsp. butter
    2 tomatoes, chopped medium fine
    1 c. green onions, chopped
    1 c. (8 oz.) Jack or Cheddar cheese, shredded
    3 medium avocados
    1/2 tsp. salt
    1/4 tsp. pepper
    1 pkg. taco seasoning mix
    1 c. sour cream
    1/2 c. mayonnaise
    2 (10 1/2 oz.) cans bean dip (optional)
    ripe olives, chopped
Preparation
    Wash the lentils and cook in salted water, bringing to a boil, then simmer for 45 minutes.
    Drain and save water.
    Add butter to lentils and mash.
    Add liquid back to lentils to get a smooth consistency.
