Zesty Zucchini Bake - cooking recipe

Ingredients
    3 medium onions, sliced
    1 garlic clove, minced
    1/3 c. oil
    1 can (28 oz.) tomatoes
    2 tsp. salt
    1/8 tsp. pepper
    2 tsp. oregano
    1 Tbsp. wine vinegar
    8 medium zucchini (about 3 lb.), cut into 1/4-inch slices
    3 Tbsp. grated Parmesan cheese
Preparation
    Saute onions
    and
    garlic in oil in skillet or saucepan until lightly
    browned
    and tender.
    Add tomatoes, seasonings and vinegar.
    Bring
    to
    a
    boil
    and
    simmer
    for
    1
    minute. Arrange zucchini
    slices
    in a greased 3-quart casserole.
    Top with tomato and onion mixture.\tSprinkle with cheese.
    Bake at 400\u00b0 for about 1
    hour or until zucchini is tender.
    Makes 10 cups or 8 to 10 servings.
