Vegetable Melts - cooking recipe

Ingredients
    1/2 c. thinly sliced cucumbers
    1/4 c. shredded carrots
    2 Tbsp. oil-free Italian dressing
    1/4 c. (1 oz.) fat-free shredded Mozzarella cheese
    2 English muffins, split and toasted
    1/4 c. alfalfa sprouts
Preparation
    Combine first 4 ingredients; set aside.
    Sprinkle with cheese over English muffin halves.
    Broil 5 1/2 inches from heat for 1 minute or until cheese melts.
    Top each half with vegetable mix and sprouts.
    Serve immediately.
