Bob'S Mussels - cooking recipe

Ingredients
    3 Tbsp. olive oil
    3/4 c. white wine
    2 tsp. garlic, minced
    12 mussels, cleaned and scrubbed
    1/4 c. plum tomatoes, finely chopped
    1 Tbsp. fresh basil, chopped
    1/2 tsp. red pepper flakes
Preparation
    In skillet, heat oil over medium heat.
    Add white wine, garlic and mussels.
    Cover and cook until mussels are opened, 2 to 3 minutes.
    Stir in tomato, basil and red pepper flakes.
    Reduce heat; simmer 2 minutes more.
    Makes 2 servings.
