Eggplant Au Gratin - cooking recipe
Ingredients

1 large eggplant
1 large egg, beaten
1 c. grated cheese
1 tsp. salt
1/2 tsp. pepper
few grains cayenne pepper
2 Tbsp. butter
Preparation

Pare, dice and cook eggplant in boiling water until tender. Drain well and mash.
Add egg and mix well.
Layer in greased baking dish, eggplant sprinkled with cheese, salt and pepper, cayenne pepper and dot with butter.
Repeat process with cheese layer on top.
Bake at 400\u00b0 for 20 minutes.
