Swiss Steak For Six - cooking recipe

Ingredients
    2 lb. round steak, pounded
    1 c. flour
    1 tsp. each: salt and pepper
    3 Tbsp. olive oil
    1/2 c. celery, chopped
    1/2 c. onion, diced
    1/2 c. green pepper, diced
    3 Tbsp. flour
    1/3 c. tomato juice
    2 c. water
Preparation
    Mix flour, salt and pepper.
    Dredge meat in flour mixture; brown in oil.
    Remove meat to a casserole.
    Saute celery, onion and green pepper in the skillet from which the meat has been removed.
    Make a gravy by adding flour, water and tomato juice to the vegetables.
    Pour over meat; bake in a 375\u00b0 oven for 1 1/2 hours.
    Makes 6 servings.
