Sweet Potato Puree - cooking recipe

Ingredients
    3 c. thinly sliced carrots
    1 (16 oz.) can cut sweet potatoes in light syrup, drained
    1/4 c. firmly packed brown sugar
    2 Tbsp. unsweetened orange juice
    1/2 tsp. ground cinnamon
    1/8 tsp. salt
    1/4 tsp. vanilla extract
Preparation
    Cook carrot slices in boiling water to cover, 15 minutes or until very tender; drain.
    Using food processor, place carrots and other ingredients, process until smooth, stopping to scrape down sides.
    Yields 6 servings (0.3 g fat).
