Lo-Cal Gratin Potatoes - cooking recipe

Ingredients
    3 medium baking potatoes
    2 Tbsp. flour
    1 medium onion, sliced thinly
    1/8 tsp. cayenne pepper
    1 tsp. paprika
    1/2 tsp. black pepper
    2 Tbsp. Parmesan
    1/2 c. Mozzarella or Blue cheese, crumbled
    12 oz. evaporated skim milk
    2 Tbsp. parsley
Preparation
    Preheat oven to 400\u00b0.
    Spray 10-inch gratin dish or pie plate with Pam.
    Layer 1/3 of potatoes, overlapping slices (spiral). Over potatoes, sprinkle 1 tablespoon flour and top with sliced onion.
    Dust with cayenne and 1/2 teaspoon paprika.
    Layer another third potatoes.
    Add remaining flour, black pepper and 1 tablespoon Parmesan.
    Top with remaining potatoes.
    Pour evaporated milk over gratin; add remaining cheeses and paprika. Cover with foil and bake for 45 minutes.
    Remove foil; lower oven to 350\u00b0 and bake 15 minutes more.
    Set for 10 minutes; garnish with parsley.
