Cornmeal Sticks(Surullitos De Maiz - Spanish Recipe) - cooking recipe
Ingredients

2 c. water
1 1/4 tsp. salt
1 1/2 c. yellow cornmeal
1/2 tsp. vanilla
lard or vegetable oil (for deep frying)
Preparation

Combine water and salt in a saucepan; heat to boiling.
Remove from heat.
Add cornmeal; mix thoroughly.
Return to cook over moderate heat until mixture separates from bottom and sides of pan.
Remove from heat.
Take mixture by teaspoonfuls and shape into balls.
In the palms of the hands, roll balls to 1/2-inch thickness, in the shape of small cigars.
Deep fry in fat, heated to 375\u00b0, until golden brown.
Remove and drain on absorbent paper. Makes 50.
