Skillet Macaroni And Cheese With Tomatoes - cooking recipe

Ingredients
    2 c. skim milk
    2 tsp. cornstarch
    1 tsp. Dijon mustard
    1/4 tsp. salt
    1/4 tsp. hot pepper sauce
    4 oz. reduced-fat cheese
    2 tsp. grated cheese (Parmesan)
    2 c. elbow macaroni, cooked
    1 c. coarsely chopped tomatoes
    1/4 c. scallions
Preparation
    Whisk milk and cornstarch in a medium-size nonstick saucepan until blended.
    Bring to a boil over medium heat, stirring often. Stir in mustard, salt and hot pepper sauce until blended.
    Reduce heat to medium heat and simmer, covered, 1 minute or until thickened.
    Stir in cheeses until melted.
    Stir in macaroni, tomatoes and scallions; heat through.
