Peasant Minestrone(Minestrone Rustica) - cooking recipe

Ingredients
    1/2 small cabbage, shredded
    2 carrots, chopped
    2 small onions
    2 turnips, chopped
    4 Tbsp. chopped parsley
    1/4 lb. shelled peas
    1/2 lb. string beans, cut
    2 lb. beef ribs
    salt and pepper
    8 c. boiling water
    1 lb. Italian sausage, cut up
    1 c. grated Parmesan cheese
Preparation
    Put
    all
    the
    vegetables in a large saucepan with beef ribs, salt,
    pepper and boiling water.
    Cover and cook over a low heat for
    about
    1
    1/2 hours.
    Remove meat from bone and return
    to soup.
    Add
    sausage and cook for another 1/2 hour. Serve with grated Parmesan cheese on top.
    Serves 4 to 6.
