Christmas White Fruit Cake - cooking recipe
Ingredients

1 c. butter
2 c. sugar
2 c. cake flour
4 tsp. baking powder
6 egg whites
1 c. milk
4 tsp. vanilla
2 tsp. lemon extract
2 lb. blanched raisins
1/2 lb. candied citron
1 lb. candied cherries (red and green)
1/2 lb. blanched almonds
2 c. coconut
Preparation

Cream butter and sugar to soft fluffy stage; add beaten egg yolks and whip.
Sift flour and baking powder together three times and add to mixture.
Alternate with milk.
Add stiffly beaten egg whites, vanilla and lemon extract.
Wash raisins; dry thoroughly. Dredge in flour, also fruits.
Work in fruits.
Coarsely chop almonds.
Stir well; work in coconut.
Bake in slow oven for 2 1/2 hours in paper-lined greased tins.
