Skillet Chicken With Vegetables - cooking recipe

Ingredients
    2 whole chicken breasts, skinned and boned
    1 Tbsp. olive oil
    1 lb. unpeeled sweet potato, cut into 1-inch slices
    1 c. apple juice
    1 tsp. herb and spice seasoning
    1/2 medium-sized bunch broccoli, cut into 2-inch pieces
    1 Tbsp. cornstarch
Preparation
    Cut chicken into bite-sized chunks.
    In 12-inch skillet over medium heat in olive oil, cook chicken until lightly browned on all sides, stirring often.
    Add sweet potatoes, apple juice and seasoning; heat to boiling.
    Reduce heat to low, cover and simmer 15 minutes.
    Add broccoli and continue cooking about 15 minutes longer or until tender.
    Mix cornstarch and 2 tablespoons water until smooth; gradually stir into hot liquid in skillet, stirring constantly, until mixture thickens slightly and boils.
    Makes 4 servings.
