Zucchini Nut Bread - cooking recipe

Ingredients
    1 c. oil
    3 eggs
    2 c. sugar
    3 tsp. vanilla extract
    2 c. zucchini, unpeeled and grated
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    1 c. chopped nuts (walnuts)
    1/2 c. Grape Nuts cereal (yes!)
Preparation
    Mix all the ingredients together.
    Bake in well-greased loaf pans at 350\u00b0 for 1 hour.
    Cool on rack in pans for 10 minutes; then turn out of pans to cool on rack.
    Makes 2 regular loaf size or 6 mini-loaf size.
