Stir-Fried Rice Casserole - cooking recipe

Ingredients
    4 c. cooked rice
    1/4 c. diced bell pepper
    1/4 c. diced carrot
    1/4 c. onion
    soy sauce to taste
    black pepper
    2 eggs, cooked (scrambled)
    2 c. chopped ham or fresh bacon bits or diced cooked chicken
    3 Tbsp. salad oil
Preparation
    In a large skillet (Teflon works best) saute onion, carrot and bell pepper until tender.
    Add rice and heat thoroughly.
    Stir in eggs and meat and fry on medium-high heat for a few minutes.
    Add soy sauce and black pepper to taste.
