Chicken Croquettes - cooking recipe

Ingredients
    3 Tbsp. butter
    1/4 c. flour
    1/2 c. milk
    1/2 c. chicken broth
    1 Tbsp. snipped parsley
    1 tsp. lemon juice
    dashes of paprika and nutmeg
    pepper and salt to taste
    1 1/2 c. ground chicken
Preparation
    Melt butter; blend in flour and add milk and chicken broth. Cook 1 minute until thickened.
    Add next 5 ingredients.
    Let cool. Add ground chicken and salt to taste.
    Chill.
    With wet hands, roll in fine cracker crumbs (scant 1/4 cup), then in beaten egg with water, then in crumbs again.
    Deep fry until golden.
    Drain on paper towel.
    Makes 8.
