Kidney Beans And Sausage - cooking recipe

Ingredients
    1 c. dry red kidney beans
    4 c. water
    2 Tbsp. vegetable oil
    1 medium onion, chopped
    1 green pepper, chopped
    1 clove garlic, crushed
    1 (15 oz.) can tomato sauce
    1 bay leaf
    1 Tbsp. chili powder
    1 tsp. Italian herb seasoning
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/2 to 1 lb. smoked sausage (to taste), cut in 1/8-inch slices
    parsleyed rice
Preparation
    Combine beans and water in saucepan and bring to a boil.
    Cook for 2 minutes.
    Remove from heat, cover and let stand for 1 hour. Return beans to heat and simmer for 1 1/4 to 1 1/2 hours or until tender.
    Remove 1/2 cup of beans, mash and set aside.
    Place oil in frying pan and cook onion, green pepper and garlic until limp. Add onion mixture to beans in saucepan along with tomato sauce, seasonings and sausage.
    Cover and simmer for 30 minutes, stirring occasionally.
    Blend in mashed beans and cook until thickened. Remove bay leaf.
    Serve over parsleyed rice.
    Makes 6 to 8 servings.
