Chicken Papaya - cooking recipe

Ingredients
    1 lb. chicken thighs (skinless optional), cut in 1/2
    3 Tbsp. vegetable oil
    4 cloves garlic, chopped
    2 Tbsp. chopped ginger
    3 1/2 Tbsp. patis (fish sauce)
    5 c. water
    2 c. green papaya, cut in cubes
Preparation
    Saute garlic and ginger in vegetable oil until golden brown. Add chicken.
    Let simmer until water is dry.
    Add patis; let it simmer again until water is completely gone and when the oil starts to sizzle.
    Then add 5 cups of water.
    Let it boil and then simmer for 15 to 20 minutes.
    Add the papaya.
    Cook the papayas until tender.
    Then serve.
