Garden Taco Rice - cooking recipe

Ingredients
    1 lb. ground beef or turkey
    1/2 c. chopped onion
    1 (1 1/4 oz.) pkg. taco seasoning mix
    1 1/2 c. water
    1 1/2 c. thinly sliced zucchini
    1 c. Green Giant frozen corn niblets (16 oz. pkg.)
    1 (14 1/2 oz.) can stewed tomatoes
    1 1/2 c. uncooked instant rice
    4 oz. (1 c.) shredded Cheddar cheese
Preparation
    In large skillet, brown ground beef and onion; drain.
    Stir in remaining ingredients except rice and cheese; bring to a boil. Stir in rice.
    Reduce heat to low; cover and simmer 5 to 7 minutes or until liquid is absorbed, stirring occasionally.
    Remove from heat.
    Fluff mixture with fork; sprinkle with cheese.
    Cover; let stand 3 minutes or until cheese is melted.
    Garnish with cilantro and cherry tomatoes, if desired.
