Diabetic Strawberry Salad - cooking recipe
Ingredients

1 large box sugar-free strawberry Jell-O
1 (8 oz.) container low-fat sour cream or low-fat yogurt
1 small can crushed pineapple
1 pt. fresh strawberries
1/2 c. nuts (optional)
20 envelopes Equal sweetener
Preparation

Dissolve Jell-O in 1 cup boiling water.
Slice strawberries and sweeten with 15 packets of Equal. Add strawberries, pineapple and nuts to Jell-O mixture and 1 cup cold water.
Pour half of this into a 10 x 10-inch bowl and put in freezer to set fast (do not let freeze). Add 5 envelopes Equal to sour cream and spread over jelled mixture.
Pour remaining Jell-O on top and refrigerate.
Cut into squares and serve.
