No Crust Zucchini Quiche - cooking recipe

Ingredients
    2 medium zucchini, coarsely shred (6 c.)
    8 oz. Swiss cheese, coarsely shredded (2 c.)
    4 eggs
    1 c. buttermilk baking mix (Bisquick)
    1/4 c. salad oil
    1/2 tsp. salt
    1/4 tsp. Italian seasoning (more may be added)
Preparation
    Set oven at 400\u00b0.
    Mix all ingredients with a fork and pour into a 9-inch pie plate.
    Bake 30 to 35 minutes until a knife inserted comes out clean.
