Eggplant Casserole - cooking recipe

Ingredients
    2 c. eggplant, cooked and drained
    1 Tbsp. butter
    1 egg
    1/2 c. evaporated milk
    1 c. grated cheese
    1 Tbsp. chopped onions
    12 saltine crackers, crushed
    salt and pepper to taste
Preparation
    Bake at 350\u00b0 for 30 minutes.
