Banana Muffins - cooking recipe

Ingredients
    1/2 c. butter or shortening
    1 c. sugar
    1 egg
    1 c. ripe bananas (medium to large)
    1 tsp. baking soda
    1 1/2 c. all-purpose flour
    1/2 tsp. salt
    2 Tbsp. hot water
Preparation
    Preheat oven to 375\u00b0 (190\u00b0C).
    Place shelf on center level of oven.
    Grease 12 medium muffin cups.
    Cream together butter and sugar in a large bowl.
    Peel ripe bananas and, using a fork, mash until no lumps remain.
    Blend egg into creamed sugar-butter mixture, then mix into it the mashed bananas.
    In hot water, dissolve baking soda.
    Add it to sugar-bananas.
    Combine sugar-banana mixture with flour and salt; stir.
    Keep stirring only until blended, about 15 to 20 times maximum.
    Mixture should be lumpy.
    Spoon batter into greased muffin pan and bake in preheated oven for 20 minutes, or until golden brown.
    Makes 12 muffins.
