Ingredients

3/4 c. butter, softened
1 c. granulated sugar
1 c. firmly packed brown sugar
2 eggs
1 tsp. vanilla
3 c. Quaker oats (quick or old fashioned), uncooked
1 1/2 c. all-purpose flour
1 tsp. soda
1 tsp. salt (optional)
Preparation

In large bowl, beat together butter and sugars until light and fluffy.
Blend in eggs and vanilla.
Add remaining ingredients; mix well.
Shape dough to form two 12-inch long rolls; wrap in wax paper.
Freeze several hours or overnight.
Heat oven to 350\u00b0. Cut each roll into 1/4-inch thick slices; bake on ungreased cookie sheets 8 to 10 minutes or until lightly brown.
Cool 1 minute on cookie sheet, then remove to wire cooling rack.
Makes about 6 1/2 dozen cookies.
