Champ'S Chicken - cooking recipe

Ingredients
    2 chicken breasts, steamed or baked and diced
    3 whole eggs
    2 c. vegetables of choice, chopped
    6 medium mushrooms, diced
    1/4 c. onions, diced
    1 1/2 oz. Mozzarella cheese
    2 oz. rice, boiled
Preparation
    Stew the vegetables, mushrooms and onions in a small amount of water.
    Mix the chicken and eggs together.
    Drain the vegetable mixture from the water and add to the chicken and eggs.
    Stir mixture in a nonstick frying pan (Pam spray works well).
    Add cheese; blend well.
    Serve over rice.
    Makes 2 servings.
