Regina Mayfield'S Baked Spinach Dip - cooking recipe

Ingredients
    1 medium onion, chopped
    2 Tbsp. oil
    1 can Ro-Tel sauce
    1 pkg. chopped spinach, thaw and squeeze dry
    2 1/2 c. grated Monterey Jack cheese
    1 (8 oz.) pkg. cream cheese
    1 c. half and half
    1 1/2 Tbsp. red wine vinegar
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    Saute onion in oil for 2 or 3 minutes.
    Add Ro-Tel sauce and cook 2 minutes.
    Add rest of ingredients and pour into a greased baking dish and bake 20 to 25 minutes at 400\u00b0.
