Potato Pancakes - cooking recipe

Ingredients
    2 to 3 medium to large potatoes (enough to make 2 c. shredded)
    2 eggs
    2 Tbsp. flour
    1 tsp. minced onion
    1/2 tsp. baking powder
    1 tsp. salt
    oil (for frying)
Preparation
    Peel potatoes and let freshen in cold water before grating. Grate potatoes (coarsely) into mixing bowl.
    Add well beaten eggs and mix thoroughly.
    Stir in flour, baking powder and salt which have been sifted together.\tAdd onion.
