Plantation Cornish Hens - cooking recipe

Ingredients
    4 Cornish hens
    salt and pepper
    2 Tbsp. melted butter
    1 (20 oz.) can pineapple chunks
    1 c. orange marmalade
    1 Tbsp. cornstarch
    2 Tbsp. lemon juice
    1 Tbsp. butter
    3 bananas, peeled and cut in chunks
    2 Tbsp. Cointreau (orange liqueur)
    8 servings hot cooked rice
Preparation
    Cut hens lengthwise into halves. Sprinkle with salt and pepper.
    Brush with 2 tablespoons melted butter.
    Bake at 325\u00b0 for 50 minutes.
