Fried Eggplant - cooking recipe

Ingredients
    eggplant
    kosher salt
    lemon juice
    cold water
    1 c. milk
    self-rising flour
Preparation
    Cut eggplant into thin slices about 3/4 inch thick.
    Soak overnight in kosher salt, lemon juice and cold water.
    Remove from the marinade; rinse and dip in 1 cup of milk.
    Then lightly coat with self-rising flour.
    Deep fry pieces until golden brown.
