Almond-Spinach Pilaf(Serves 4) - cooking recipe

Ingredients
    2 tsp. olive oil
    1 c. thawed frozen chopped spinach, squeezed dry
    1/2 c. chopped scallions
    1/4 c. chopped fresh dill
    1/4 tsp. salt
    1/8 tsp. freshly ground black pepper
    4 ___ uncooked rice
    1 ___ whole almonds, coarsely chopped
    1 1/4 c. low sodium beef broth
    1 small navel orange, peeled and sectioned
Preparation
    In a medium saucepan over medium heat, warm oil.
    Add the spinach, scallions, dill, salt and pepper.
    Cook, stirring frequently until vegetables are tender, about 2 minutes.
    Add the rice and almonds; cook, stirring constantly until rice is well coated with oil, about 2 minutes.
    Pour in broth and bring to a boil.
    Cover, reduce heat to low and simmer until rice is tender, 20 minutes.
    Gently stir in orange sections.
