Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 c. cold cubed chicken or other meat
    2 Tbsp. margarine
    dash of pepper
    8 to 10 crackers, crumbled
    3/4 c. milk
    1/2 tsp. salt
    1 c. shredded cheese
Preparation
    Peel and slice eggplant 1/2 inch thick.
    Parboil with salt until tender.
    Alternate in a baking dish, a layer of eggplant, chicken and cracker crumbs.
    Repeat until used.
    Pour milk over all and top with crumbs and pepper.
    Bake 30 minutes in a 350\u00b0 oven. Put shredded cheese on top the last 10 minutes.
