Squash Casserole - cooking recipe

Ingredients
    2 lb. squash
    1/2 c. chopped onion
    3/4 c. Ritz crackers
    4 Tbsp. butter
    1 1/2 c. grated sharp Cheddar
    3 eggs
    1/2 c. evaporated milk
    salt and pepper to taste
Preparation
    Cook sliced squash in boiling water until fork-tender.
    Drain. Add cracker crumbs to squash.
    Add butter, 1 cup cheese, salt and pepper.
    Beat eggs lightly with evaporated milk.
    Pour into buttered casserole dish.
    Sprinkle remaining cheese on top.
    Bake at 425\u00b0 for 30 to 45 minutes, until medium dry.
