Chicken Breasts With Crab(Pollo Con Granchi) - cooking recipe

Ingredients
    4 whole chicken breasts, boneless
    1/4 c. butter
    1/4 c. olive oil
    1 c. carrot strips
    1 c. fresh mushrooms, sliced
    1/4 lb. fresh asparagus, sliced
    1/4 c. fresh parsley, chopped
    1/4 c. white wine
    1 tsp. salt and pepper
    1/2 tsp. oregano
    6 oz. crab meat, fresh or frozen king crab
Preparation
    Slice chicken breasts
    into
    8 pieces.
    Heat butter and oil in large
    skillet; add chicken pieces.
    Saute lightly over medium heat.
    Add
    carrot
    strips,
    mushrooms
    and
    asparagus slices. Cook for
    3
    to 4 minutes.
    Add remaining ingredients except crab. Continue
    cooking,
    stirring occasionally, until chicken is tender to fork,
    10 to 15 minutes.
    Add crab last 5 minutes, tossing lightly.
    To
    serve,
    place chicken pieces on platter and spoon crab mixture on top.
    Sprinkle with parsley. Makes 4 to 6 servings.
