Breakfast Casserole - cooking recipe

Ingredients
    5 medium potatoes, peeled and thinly sliced
    1 to 2 Tbsp. olive oil
    1 tsp. black pepper
    1/4 tsp. garlic powder
    1/2 tsp. paprika
    salt to taste
    1 Tbsp. dried parsley
    1 Tbsp. Texas Pete (optional)
    1 medium onion, thinly sliced
    3 large or extra large eggs, well beaten
    1/2 c. Cheddar cheese, grated
Preparation
    Heat olive oil in skillet. Add potatoes and spices. Brown potatoes on both sides. Scatter onion over all and cook with lid on until tender (turn gently once or twice).
    Spread eggs over all and cover with grated cheese. Cook on very low temperature with lid on until eggs are set, approximately 10 to 15 minutes. Serve with ketchup and horseradish, if desired. Serves 4.
